Poultry are domestic fowls, such as chickens, turkeys, ducks, or geese, raised for meat or eggs, and grilling poultry is a little different from grilling red meats. This is an easy way of cooking small birds such as Cornish hens or quail or small pieces of young larger birds. On the left is an example of a small grilled small bird and grilled vegetables. Big birds such as a turkey require slow and easy cooking. One of the more popular grilled items today is breast of chicken, and cooked properly they are fabulous. However, I have tasted some breast of chicken that was dry and tasteless; which is easily avoided. On the right is a sample a grilled breast of chicken and a grilled radicchio arugula and Boston lettuce salad with a lemon vinaigrette dressing.    I have also had horribly limp grilled vegetables, which is from cutting the vegetables too thin. Check out our recipes at  Food Wine Italian site on the Italian Grill page.
